Meatless Dinner


So my doctor and I had a very detailed conversation about my health. He made some great points about things that I need to change about my diet. I thought that I was making healthier choices already but my current health situation beg to differ.
I looked a my diet and made some much adjustments. Adjust number one has the family and I eating meat once a week.

We usually have picnics on Friday nights and that usually involves me bacon, sausage, eggs, pancakes with a variety of fruit and hot chocolate. I decided to turn things around last night. I made an entirely meatless dinner and everyone loved it.

Tofu sticks

Extra firm Tofu (Organic)
black pepper
season salt
1/2 cup of vegetable

I fried the sticks and used them in place of bacon and sausage and it was awesome.

1 cup of flour
1/2 cup applesauce
2 medium bananas (very soft)
Baking powder
baking soda
1/2 cup of Almond milk
**the measurements might be off because I don’t always measure when I’m cooking but the pancakes came out fluffy and tasty even without me adding any sugar and eggs.

Hash Potatoes

6 Yukon potatoes
black pepper
season salt
3 tablespoons of vegetable oil

This also came out really well, I even got the picky diva to eat almost all of her dinner.


1 Banana
1 Mango
1 cup of Blueberries
1/2 cup of Blackberries
2 cups of cubed Pineapples
1 cup of water
1/2 cup of Almond milk
1 cup of Strawberries

I didn’t add any sweetener to this smoothie because I didn’t think it was necessary. It was slightly tart but I like it. The diva and I battled over her drinking the smoothie but she did.

I added green grapes to the mix and dinner was complete. Everyone had seconds, they ate the fried Tofu and never complained about it. I don’t think everyone knew that they were eating Tofu so I am just going to leave that alone.

I will be looking for more meatless, egg-less, dairy-free and gluten free meal ideas.

Angel Food Cake with Strawberries and Mango Sauce

• 2 Packages of small Angel food cakes
• Fresh Strawberries
• 2 Mangoes
• 5 Tablespoons Lime Juice
• 2 Teaspoons Honey
• 1 pinch of salt

1. Puree the mangoes until smooth.
2. Pour into a saucepan and heat over medium heat. Add lime juice and honey.
3. Stir together salt.
4. Heat until slightly thickening and remove from heat. Let cool a little and then place in the fridge to chill.
5. Slice the strawberries and then serve with sauce.

Red Berries and Banana Smoothie

This one is a simple and delicious smoothie and it was very easy to prepare. I still can’t get my kids to try it out but I will keep trying until I find something they like.

1/4 cup of Raspberries
1/4 cup of Strawberries
1/2 banana
1 teaspoon of golden flax seed meal (Organic)
1 cup of unsweetened almond milk

Cut up all the fruits in advance and freeze them for several hours. Make sure you add the flax seed meal last or it will sink in the bottom of your blender.

Training Day 5: It felt great running through the pain.

The plan was to only take a day off from training but thanks to rainy day, I was not able to keep that promise. The two days off from running were needed because I ran a longer distance today. I was not prepared for the leg cramps that came with today’s run though. I had to pause a few times to stretch and get myself together.

The plan was to get in at least 5 miles today but I had to stop at 4.25 miles after noticing that my family was tired of waiting on me. Yes, I took the family with me so they kids can enjoy the beautiful weather before it gets cold again.

I was so proud of my efforts that I decided to keep the momentum going and eat a yummy/healthy dinner. So I came home and made kale, bulgur and salmon for dinner which I then paired with my post run smoothie.

This is how I store my smoothie ingredients for each week. I am a planner when it comes to eating right or else I can’t keep up with my game plan of eating right and getting healthy.


This is the final product and it came out great…I should point out that I added 1 cup of coconut milk and 1/2 cup of water to my smoothie. I didn’t put exact measurements this time because I didn’t measure out my ingredients. I figured it would be better to just go with the flow and not be too rigid with this smoothie.

Well I better get going, “Scandal” is on and I am way too distracted by how great tonight’s episode’s is. I was somehow able to bake a loaf of banana bread for breakfast…it is a surprise for my munchkins who are fast asleep right now.

Pineapple Berry Smoothie

1/2 cup of blackberries
1/2 cup of blueberries
1/2 cup raspberries
1/2 cup of chopped pineapples
1/4 cup of almonds
1/4 cup of strawberries
1 1/2 cups of 2% milk

I usually freeze all my fruits at least 2 days in advance but I was only able to freeze some of them. This smoothie came out great, it was a little thicker than I expected but was really good. Hope you are all having a wonderful day and I hope you enjoy this yummy recipe.

Berries are yummy

Berries are yummy but I don’t like eating them individually. I don’t know who came up with the idea of smoothies but they have become my favorite new snack/ breakfast. Today I made a berry smoothie to go along with a Barley soup and South Western salad. I will do another post on the soup later, below is the recipe. I hope you enjoy it as much as I did.


1/4 cup of blueberries
1/4 cup of raspberries
1/4 cup of blackberries
1/4 cup of strawberries
1 1/2 cup of 2% of milk



I packaged and froze all but the strawberries in advance. I took the frozen berries and add the fresh strawberries and blended it all with the milk. This smoothie went very well with the soup and salad. I thank you for stopping by and for reading 🙂
